This spring I found this recipe and fell in love. I made it several times throughout the summer and really enjoyed the lightness and freshness of it, plus it’s quick and easy to make.
I never knew much about quinoa (keen-wah) before, but I soon found out that it is one of the healthiest foods that you can ever hope to find. As it turns out, quinoa may be the ultimate survival food because it has everything that your body needs – protein, fiber, essential amino acids, vitamins, minerals, healthy fat, and carbohydrates. Pair that with some veggies and cheese and you’ve got a complete meal…perfect for vegetarians.
